Butter (½ cup softened), Shortening (¼ cup), Light brown sugar (one cup), Sugar (½ cup), All-purpose flour (one cup), Baking soda (½ tsp), Egg (1), Water (¼ cup), Vanilla extract (1 tsp), Rolled oats (3 cups), Salt (½ tsp), Deglet Noor or Medjool dates (¾ cup, finely chopped), Golden dried raisins (½ cup).


Make cookies, cream butter, sugars, egg, shortening, water, and vanilla. In a separate bowl, baking soda, whisk flour, and salt, then combine with a wet mixture. Mix in oats, dates, and raisins.

Bake immediately or chill for 20-30 mins. Divide into balls and place on a parchment-lined sheet. Bake at 375°F for 10-12 mins. Cool on sheet for 5 mins.

Medjool Date, Chile, and Yogurt Dip



– Two cups of pitted Medjool dates

– Two Jalapeno chiles, seeded and de-ribbed

– Half a bunch of parsley

– One poblano chile

– Half a bunch of green onion

– One tablespoon of fresh thyme

– One cup of non-fat Greek yoghurt

– Kosher salt to taste

– Freshly ground black pepper to taste
